Korker Cocktail Sausage and Baked Bean Hotpot

Serves 4

1 small 454g pack of Korker Cocktail Sausages
4-5 medium sized Potatoes thickly sliced
1 large onion sliced
1 large tin baked beans
4 large field mushrooms sliced
1 large Tin chopped tomatoes
Vegetable stock (fill empty tomato tin with boiling water and stock)

Cook sliced potatoes in boiling water for 5 mins
Fry sausages until browned, remove from pan and put to one side
Add sliced onions to pan and cook until soft
Add tinned tomatoes, vegetable stock, sliced mushrooms, and bring to the boil
Stir in baked beans, add sausages , salt and pepper and put in an oven proof casserole dish
Arrange part cooked sliced potatoes on top, dot with butter or oil and salt and pepper
Bake in preheated oven 200°C until golden brown (approx. 1 hour)

Serve with crusty bread and vegetables.



Serves 4 People

12 Korkers Chilli Sausages (defrosted)
1 Red Pepper de-seeded and sliced
1 onion roughly chopped
1 Packet any Sausages Casserole Mix

Slice each sausage into 3 or 4 according to personal choice
Lightly brown sausages in a griddle pan
Drain off excess fat and place into oven proof dish
Add peppers and onions and casserole mix made up according to packet instructions.
Season to taste
Cover and place in oven at 180˚C for 20-30 mins, stir occasionally and add more water if too thick.

Serve with either fresh Vegetable or rice.
